      Nan's Biscuits

      Simple and delicious, these chocolate chip biscuits are a perfect rainy day bake.

      Credit to Nan who has been baking up this comfort recipe for years.

      Only alteration is an additional egg yolk.

      Ingredients:

      - 125g unsalted butter, room temp

      - 1/2 cup of brown sugar, lightly packed

      - 1/2 cup of granulated sugar

      - 2 tsp vanilla bean paste

      - 1 egg and 1 egg yolk, whisked (prefered at room temp, not nesesary)

      - 1 & 3/4 cup of self-raising flour

      - 1 tsp salt

      - 145g chocolate chips

      - Optional: chopped walnuts

      Method:

      1. Preheat the oven to 180 Celcius.

      2. Beat together the butter and sugars until light and fluffy.

      3. Add the vanilla extract and egg mixture and beat until just incorporated.

      4. Incorporate the flour and salt slowly, on a slow speed.

      5. Using a spatula mix in chocolate chips and nuts.

      6. With a teaspoon, scoop small portions to roll into balls and place on baking tray.

      7. Bake the bisuits for 12 minutes or until *just* golden brown on the edges.

      8. If you have any patience left, let the biscuits cool on tray before enjoying.
